Cultivating Connection: Velvet Buffalo and Bountiful Beloit Farm-to-Table Partnership in Beloit, WI

At Velvet Buffalo, our menu changes with the seasons to showcase the freshest, most flavorful fruits and vegetables. In the spring, we might feature dishes with strawberries, asparagus, or carrots. Summer brings succulent blueberries, peaches, tomatoes, and zucchini. Fall and winter offer comforting flavors of pumpkin, figs, squash, and kale.



We're lucky to have a partner in Bountiful Beloit, just a half mile down the road from our kitchen. Bountiful Beloit is a farm and natural foods store that prides itself on providing a wide variety of organically grown produce. The farm grows over 50 different kinds of vegetables and herbs throughout the seasons, including lettuce, radishes, cilantro, green garlic, and spinach.


When you join us for dinner, you can be sure that our house-made pasta and delectable desserts are made with the freshest ingredients possible. Our produce comes from farmers in our own backyard, and we're proud to support our local community.

We recently asked Jenny from Bountiful Beloit about her thoughts on providing produce to the local community. Here's what she said:


How did you become interested in farming?

My husband and I both grew up in farm families half a continent away from Beloit in opposite directions. We met in Beloit working at an organic vegetable farm in 2001 and have been farming together ever since.


What products do you provide for Velvet Buffalo?

Fresh, seasonal vegetables including carmen red peppers, red potatoes, crème brulee shallots, leeks, carrots, escarole, kale, eggplant, squash of all varieties, and more!



Why did you want to partner with Velvet Buffalo?

We’re lucky to have a gourmet, farm-to-table restaurant just a half mile from our farm market.


How long have you been providing your produce to Velvet Buffalo?

Two years.


What are the benefits of locally sourced produce?

Supporting local not only means reducing your carbon footprint and boosting the local economy, but also experiencing the joy of knowing your farmer.


What sets you apart from other vendors?

My husband is a stickler for excellent quality and vegetable cleanliness. He has 20 years of experience honing in on the tastiest varieties that do well in our region. Plus, we are a woman-led and Latinx-owned family farm which is pretty cool!
